Magret de pato a la naranja con arroz salvaje
Una
versión simplificada, rápida y fresca de la clásica receta francesa
"Pato a la naranja". Puede ser el plato perfecto para una cena
romántica.

Duck breast a l'orange with
wild rice
Simplified,fast
and fresh version of the classic french recipe "Duck a l’Orange". Could
be the perfect dish for a romantic dinner.

historians tell us the practice of pairing of citrus fruits with fatty
meat is thousands of years old, likely originating in the Middle East.
The acid in the fruit contacts the fat in the meat, making the dish more
enjoyable and digestible. Ducks have been consumed by humans from
prehistoric times forward. Bitter oranges were introduced (in Europe) ,
via Spain, in the early middle ages.”

Hacer cortes diagonales en la parte grasa de la pechuga sin llegar a la
carne. Adobar con el zumo de una naranja, un poco de ralladura de la
piel, la sal y las especias. Se puede dejar reposar en el frigo desde
media hora (mínimo) hasta dos días.

Score duck skin and fat without piercing the meat in crosshatch
pattern. Marinate with the juice of one orange, some orange zest, salt
and the spices. It could be left in the fridge for a time varying from
half hour (minimum) to two days.

Mientras tanto … sofreír el arroz con 3-4 cucharadas de aceite de
oliva hasta que se quede transparente. Cubrir con agua un dedo por
encima del arroz y añadir medio cubito de caldo de pollo.

Meanwhile … fry the wild rice with 3-4 tablespoons of olive oil until
the grains get translucent. Cover with water half inch over the level of
the rice and add half of the chicken stock cube.

Cocer el arroz salvaje a fuego fuerte hasta que absorba la mitad del
agua. Cubrir con una tapadera y dejar cocer 20 minutos a baja potencia.
Asegurarse de que los granos queden blandos y sueltos.

Bring to boil and cook over medium-high heat until half of the water is
absorbed. Cover with a lid, reduce heat to low and cook for 20 minutes.
Make sure rice is tender.

Precalentar una plancha a fuego fuerte y freír la pechuga primero por
la parte grasa hasta que se dore y obtenga una textura crujiente, unos
5-10 minutos. Dar la vuelta y cocinar otros 5 minutos. Dejar reposar 5
minutos y cortar en trozos finos.

Preheat frying pan over high heat and lay the breasts skin-side down.
Cook until the skin is well done, brown and crispy, at about 5-10 mins.
Turn the breasts over and cook for another 5 minutes. Let stand for 5
minutes and slice crosswise.

5. Con un cuchillo bien afilado primero quitar la piel y la parte blanca y luego sacar los gajos de la segunda naranja.

5. Using sharp knife remove peel and white pith from the second orange and cut between membranes to release pulp only.

6. Poner a la plancha los trozos de pechuga si se prefieren más hechos y servir como
se muestra en la imagen. Decorar con flores comestibles y una ramita de
tomillo fresco.

Fry additionally over high heat the breast slices if you prefer the
meat well done and serve as shown on the picture. Decorate with edible
flowers and fresh thyme.
