"En un lugar de la Mancha, de cuyo nombre no quiero acordarme, no ha
mucho tiempo ..." con los amigos preparamos de forma
tradicional los gazpachos manchegos en las fiestas de San Jorge. Según
algunas fuentes Cervantes menciona ésta comida bajo el nombre de
"galianos", pero yo no llegue a encontrarla en el "Quixote". Sin embargo
hay una frase de Sancho en la segunda parte que sí los menciona: "Mejor me está a mí una hoz en la mano que un cetro de gobernador; más
quiero hartarme de gazpachos que estar sujeto a la miseria de un médico
impertinente que me mate de hambre; y más quiero recostarme a la sombra de una
encina en el verano y arroparme con un zamarro de dos pelos en el invierno, en
mi libertad, que acostarme con la sujeción del gobierno entre sábanas de
holanda y vestirme de martas cebollinas. Vuestras mercedes se queden con Dios,
y digan al duque mi señor que, desnudo nací, desnudo me hallo: ni pierdo ni
gano; quiero decir, que sin blanca entré en este gobierno y sin ella salgo,
bien al revés de como suelen salir los gobernadores de otras ínsulas." Estas son las frases, escritas hace 4 siglos que hacen del "Quixote" una obra universal. Algunas veces pienso que la cocina manchega es como la novela de Cervantes.

"In a village of la Mancha, the name of which I have no desire to call to mind, ... not long since ..."
we prepared the typical gazpacho following a traditional recipe during
the Saint George festivities. According to some online sources Cervantes
mentioned this meal under the name of "galianos" but I couldn't find
the recipe in "Don Quixote". However while searching I found it in a
dialogue in the second part where Sancho says: "A
reaping–hook fits my hand better than a governor's sceptre; I'd rather have my
fill of gazpacho' than be subject to the misery of a meddling doctor who me
with hunger, and I'd rather lie in summer under the shade of an oak, and in
winter wrap myself in a double sheepskin jacket in freedom, than go to bed
between holland sheets and dress in sables under the restraint of a government.
God be with your worships, and tell my lord the duke that 'naked I was born,
naked I find myself, I neither lose nor gain;' I mean that without a farthing I
came into this government, and without a farthing I go out of it, very
different from the way governors commonly leave other islands." These are the sentences written 4 centuries ago that make "Quixote" a timeless novel. I often think that La Mancha's cuisine is like Cervantes' book.

Sofreir el ajo, los pimientos cortados a tiras longitudinales, los
menudillos y la rebanada de pan hasta que se doren. Reservar los
pimientos y pasar por el mortero el resto del sofrito.

Fry the garlic, the peppers cut into strips lengthwise, the giblets and
the slice of bread until they start to brown. Remove the peppers and
smash into mortar the rest of the fried ingredients.

Sofreír la carne cortada en trozos pequeños hasta que se doren,
removiendo de vez en cuando. Añadir los champiñones cortados en láminas y
dorarlos también sin dejar de remover.

Saute the meat cut into small pieces until browned, add the sliced
mushrooms and fry until they brown too, stirring occasionally all the
time.

Rociar con el vaso de vino y un vez evaporado el alcohol poner el
tomate. Seguir removiendo otros 10-15 min hasta que reduzca.

Pour over the wine and once the alcohol is evaporated add the
tomatoes. Keep frying and stirring occasionally for another 10-15
minutes.

Cubrir con agua, añadir la mezcla de ajo, pan y menudillos y las
especias (romero y tomillo). Hervir por un tiempo de 20-30 min.

4. Cover with water, add the garlic bread and giblets mixture, and the spices (rosemary and thyme). Boil for 20-30 mins.

5. Por último añadir las tortas de gazpacho y seguir cocinando hasta que se ablanden. Poner encima los pimientos verdes fritos y servir caliente.

5. Finally add the dried pita bread and keep cooking until they soften. Put over the fried green peppers and serve hot.
