Duck breast a l'orange with
wild rice

Simplified, fast and fresh version of the classic french recipe "Duck a l’Orange". Could be the perfect dish for a romantic dinner.

“Food historians tell us the practice of pairing of citrus fruits with fatty meat is thousands of years old, likely originating in the Middle East. The acid in the fruit contacts the fat in the meat, making the dish more enjoyable and digestible. Ducks have been consumed by humans from prehistoric times forward. Bitter oranges were introduced (in Europe) , via Spain, in the early middle ages.”

El arroz salvaje /Zizania/

Wild rice /Zizania/
Paso a paso
Step by step

1. Score duck skin and fat without piercing the meat in crosshatch pattern. Marinate with the juice of one orange, some orange zest, salt and the spices. It could be left in the fridge for a time varying from half hour (minimum) to two days.

2. Meanwhile … fry the wild rice with 3-4 tablespoons of olive oil until the grains get translucent. Cover with water half inch over the level of the rice and add half of the chicken stock cube.

3. Bring to boil and cook over medium-high heat until half of the water is absorbed. Cover with a lid, reduce heat to low and cook for 20 minutes. Make sure rice is tender.

4. Preheat frying pan over high heat and lay the breasts skin-side down. Cook until the skin is well done, brown and crispy, at about 5-10 mins. Turn the breasts over and cook for another 5 minutes. Let stand for 5 minutes and slice crosswise.

5. Using sharp knife remove peel and white pith from the second orange and cut between membranes to release pulp only.

6. Fry additionally over high heat the breast slices if you prefer the meat well done and serve as shown on the picture. Decorate with edible flowers and fresh thyme.

Gazpacho manchego

Gazpachos Manchegos

Gazpacho Manchego

"In a village of la Mancha, the name of which I have no desire to call to mind, ... not long since ..." we prepared the typical gazpacho following a traditional recipe during the Saint George festivities. According to some online sources Cervantes mentioned this meal under the name of "galianos" but I couldn't find the recipe in "Don Quixote". However while searching I found it in a dialogue in the second part where Sancho says: "A reaping–hook fits my hand better than a governor's sceptre; I'd rather have my fill of gazpacho' than be subject to the misery of a meddling doctor who me with hunger, and I'd rather lie in summer under the shade of an oak, and in winter wrap myself in a double sheepskin jacket in freedom, than go to bed between holland sheets and dress in sables under the restraint of a government. God be with your worships, and tell my lord the duke that 'naked I was born, naked I find myself, I neither lose nor gain;' I mean that without a farthing I came into this government, and without a farthing I go out of it, very different from the way governors commonly leave other islands." These are the sentences written 4 centuries ago that make "Quixote" a timeless novel. I often think that La Mancha's cuisine is like Cervantes' book.
